The ones that I appreciate the most are along the lines of either: "You really challenged me this semester," or "You really made me think."

Of course this comes from the guy who always concludes his first class with something along the lines of: "I know there are grades and you are required to know certain things and show certain skills by the end of the class; but, ultimately, I don't really care about that.  My job is to make you think about how you think about things. And if, by the end of the class, I haven't made you reevaluate something you know or believe, regardless of how small it may be, and you haven't done the same to me, then neither of us did our job." And I full-heartedly believe that.
